Theatre turnaround is measured between cases, and scrubbing is on that critical path. Two stations lets the surgeon and the assistant scrub simultaneously and walk in together, which takes a full scrub cycle out of the changeover.
One trough, not two bowls
Two separate bowls need a divider between them, and the base of that divider is exactly where water stands and residue builds. A single continuous trough with radiused corners drains to one point and can be wiped end to end without an obstruction in the middle.
Wall mounted
With no legs or cabinet the floor beneath is completely clear, so it is mopped in one pass without moving anything, and there is nothing standing on the floor to collect splash at low level.
